A milestone by the water
On November 15, 2025, we catered United Arts Collier’s Seaside Soirée Gala at Seagate Beach Club in Naples. The guest experience began with passed appetizers, continued through a seated salad and dinner, and finished with small desserts as the party carried into the evening.
The dinner was originally planned for 185 guests, but more than 225 people showed up. Chef Larry and the team adjusted to the larger crowd and made sure everyone was fed. It became our largest plated dinner yet, in a setting we loved.
The work behind each plate
The menu offered garlic-and-thyme filet mignon medallions or lemon-butter Gulf grouper, both served with whipped mashed potatoes and oven-roasted vegetables. A stuffed zucchini boat provided a vegetarian option.
Our mobile kitchen and outdoor preparation area supported the cooking on site. Chefs, assistants, kitchen support, and servers worked together to prepare the courses, finish the plates, and bring them out to the guests.
The infrastructure behind the occasion
Cooking for a large seated dinner outdoors takes a complete preparation and service setup. Our plan included the mobile kitchen, work tables, kitchen equipment, preparation tents, a generator, and lighting for the team behind the scenes.
We also coordinated dinner-service plates, cutlery, napkins, water glasses, and coffee-service equipment, along with setup, delivery, and breakdown. The client handled the bar and bartending separately.
We also helped organize the preselected plated meals. Assigned seats connect each guest to their meal choice and any dietary requirements, so guests should remain at their assigned table until dinner has been served. Moving between tables before service can disrupt weeks of preparation and make it harder to deliver the right meal to the right person.
